Summer is here, and I hope that everyone has a bright, beautiful weekend. Besides a very welcome heat wave, everything has become lush and alive again, and we have been enjoying the late evenings filled with that earthy summer smell.
I have one thing on my agenda for this long weekend: throwing together a bowl of chunky guacamole. 3 ripe avocados
1 white onion, finely diced
4 limes, juiced
4 sprigs of cilantro, finely diced
2 tsp. salt
Cut the avocados in half, and then take a spoon and scoop out the meat. Cut the avocados in large chunks, and lightly mash one to bind everything together. Add in your juice, cilantro, onion, and salt, and mix gently.

Makes my mouth water. I have approx. 6 outdoor above the ground pots of herbs and am planning on some parsley/mint foraging today to make some tabouli. Your avacados look so fresh. Have not found a great selection in this neck of the woods. Could make a meal of veggies and herbs. Got your welcome, dear note---feel the same--just call me blessed.
