My Favorite Chocolate Cake

I am not sure whether this is a great recipe, or if I just love any Devil's Food cake that I come in contact with. This one in particular is light and subtle, perfect when baked as a sheet, and then layered with chocolate mousse and ganache. 



Sugar                 1  2/3 C
A.P. Flour         1  1/2 C
Baking Soda        1 tbsp.
Baking Powder     1 tsp.
Cocoa                         1 C

Eggs                         2 ea.
Veg. Oil                 1/4 C
Butter, melted    7 tbsp.
Water                  1 1/4 C
Vanilla                    1 tsp.

Set the oven to 350 F and then prepare your baking sheet or pan by either:
A. Using a Silpat or parchment in a standard half sheet tray.
B. Smearing room temperature butter all over the bottom and sides of said pan, and then dusting with cocoa. 

Mix together the dry ingredients, making sure to break up any cocoa lumps and fully incorporating the sugar. In a seperate bowl, mix together the liquid ingredients, making sure to break up the eggs. Mix together the dry and liquid ingredients thoroughly, and then gently pour into your baking vessel. Bake for 15-25 minutes, or until the center is set, and passes the knife test.

Yes---Chocolate is good but this piece of cake looks better than good. Cruel thing for me to look at so early in the morning.
