taco tuesday

i love mexican food.
but not the greasy-refried bean style mexican food.

when i moved to california i was introduced to the fresh flavors of cilantro and lime. since then salsa has been a staple in my diet and when we can get a hold of perfect avocados, we all share a bowl of guacamole for dinner.
so, here is my favorite way to make a summer salsa fresca.

1 green bell pepper, finely diced
1 red bell pepper, finely diced
1 red onion, finely chopped
3 cloves  garlic, minced
3 roma tomatoes, diced
1 jalapeno, seeded and diced

2-3 limes, juiced
3 tablespoons olive oil

1 teaspoon ground cumin
2 stems of cilantro, roughly chopped
salt to taste

dice and chop and mince accordingly (sorry if this is tedious, but it is worth the effort) and then mix everything together in a bowl. let the mixture sit in the fridge for a while to meld together, roughly about 2 hours or more.
last tuesday: tacos made with fried zucchini medallions, sauteed mushrooms, beans, and corn, with a little sharp cheddar cheese, salsa and cilantro.

YUMMMMMM. Is this the Salsa you made when you were here in March? Was there also some corn in it? I absolutely loved the salsa.

Addendeum----Planted cilantro in my flowers---they look great and will be able to harvest fresh for some great this summer. Also, fixed stuffed poblano peppers tonight. Trying to fix more fresh new types of food and must admit really enjoying experimenting. Wish you lived closer---would love to pick yours and Danny's brains. The pictures of the food look great.
