i love mexican food.
but not the greasy-refried bean style mexican food.
when i moved to california i was introduced to the fresh flavors of cilantro and lime. since then salsa has been a staple in my diet and when we can get a hold of perfect avocados, we all share a bowl of guacamole for dinner.so, here is my favorite way to make a summer salsa fresca.
1 green bell pepper, finely diced
1 red bell pepper, finely diced
1 red onion, finely chopped
3 cloves garlic, minced
3 roma tomatoes, diced
1 jalapeno, seeded and diced
2-3 limes, juiced
3 tablespoons olive oil
1 teaspoon ground cumin
2 stems of cilantro, roughly chopped
salt to taste
dice and chop and mince accordingly (sorry if this is tedious, but it is worth the effort) and then mix everything together in a bowl. let the mixture sit in the fridge for a while to meld together, roughly about 2 hours or more.
